Recipe of the week: Roasted Asparagus with Fried Eggs and Parmesan
An easy but semi-gourmet (or as close as I get!) recipe using the $1.99/lb asparagus this week at Safeway. It's from this book, which isn't quite as nice as the other Williams-Sonoma cookbooks, but still has fantastic pictures and tasty recipes.
Pick up your asparagus soon! It may only be on sale through Tues Jan 26. Oh, and if you're at Safeway, be sure to pick up some 99¢ cake and other sale items!
Roasted Asparagus with Fried Eggs and Parmesan
Makes 4 servings
Asparagus spears, 1.5 pounds
Extra-virgin olive oil, 2 tablespoons
Unsalted butter, 2 tablespoons
Large eggs, 4
Parmesan cheese, small chunk
Salt & pepper
Preheat the oven to 425F.
Break off the tough end of each asparagus spear about 1 inch from the base. Place the spears on a baking sheet, drizzle with the oil, and toss well to coat. Sprinkle lightly with salt and pepper. Roast until the spears are just tender when pierced with a small knife, 10-12 minutes.
While the asparagus is roasting, melt 1 tablespoon of the butter in a large nonstick frying pan over medium-low heat. Break 2 of the eggs into the pan, spacing them a couple of inches apart so they do not touch. Cover the pan and cook the eggs for 2 minutes. Uncover and cook until the whites are opaque and the yolks are still runny, 2-3 minutes.
Divide the asparagus among 4 warmed plates. Using a slotted spatula, carefully lift each egg and place it next to but slightly overlapping a serving of asparagus. Sprinkle the eggs lightly with salt and pepper. Immediately grate some of the Parmesan cheese over the dish. Repeat with the remaining 2 eggs and serve right away.

New York Steaks w Boursin and Merlot Sauce (to celebrate $3.77/lb steaks from Safeway!)
This recipe is from an old copy of Bon Appetit that I had around the house. The magazine tends to have rather complicated recipes, but I find that I can just ignore around 30% of both the ingredients and instructions and everything turns out just fine :) I love how the pictures make every dish look super delish, and it's actually pretty cheap on Amazon.
Anyway, onto the recipe! If you haven't heard of Boursin (see what I mean about the magazine...), it's a French garlic-and-herb cheese that they sell near the gourmet cheeses at Safeway. It tastes fantastic with the steak, but feel free to leave it or any of these other ingredients out of the recipe if you're just not in the mood.
New York Steaks with Boursin and Merlot Sauce
6 servings
2 tablespoons olive oil
6 9 to 10oz New York steaks, trimmed (about 1 inch thick) On sale this week!!!
1/2 of 5.2-oz package of Boursin or other French garlic-and-herb cheese, cut into 6 wedges
1.5 cups Merlot or other fruity red wine
1/4 cup chilled butter, cut into small pieces
2 teaspoons chopped fresh italian parsley
2 teaspoons chopped fresh chives plus whole chives for garnish
Heat 1 tablespoon oil in each of 2 heavy large skillets over medium-high heat. Sprinkle steaks with salt and pepper. Add 3 steaks to each skillet; cook about 4 minutes per side for medium-rare. Transfer to platter; top each with 1 cheese wedge. Tent with foil to keep warm.
Pour off drippings from 1 skillet; add wine to skillet and boil over high heat until reduced to generous 1/2 cup, scraping up browed bits, about 5 minutes. Remove from heat; add butter and stir until melted. Mix in parsley and chopped chives. Season with salt and pepper. Pour over steaks. Garnish with whole chives.

This week's recipe: Tasty broccoli casserole, using 79¢/lb broccoli from Safeway!
This recipe is from my roommate Kiran, who bakes it all the time both for potlucks and for normal dinners. The first time I tried it I had to ask for the recipe! Serve it with a loaf of fresh Safeway bread ($1.79 each) for a light dinner. If you need some meat, mix some cooked sausage into the casserole for a hearty dinner! The original recipe can be found at allrecipes.com.
Ingredients3 tablespoons butter
1 onion, chopped
1 - 1.5 lbs chopped broccoli (only 79¢/lb this week!)
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup shredded sharp Cheddar cheese
1 cup mayonnaise
2 eggs, beaten
1/2 teaspoon garlic salt
1/4 teaspoon ground black pepper
1/2 teaspoon seasoned salt
1 1/2 teaspoons lemon juice
12 buttery round crackers, crushed fine (alternative: crumbs made from leftover bread)
2 tablespoons butterDirections
Preheat oven to 350 degrees F (175 degrees C).
Melt 3 tablespoons butter in a medium skillet over medium-high heat. Saute onion until golden.
In a 2 quart casserole dish, mix together onion, broccoli, soup, cheese, mayonnaise, eggs, garlic salt, pepper, seasoned salt, and lemon juice. Sprinkle crushed crackers over top and dot with remaining 2 tablespoons butter.
Bake uncovered in preheated oven for 45 minutes, until heated through and browned on top.
